Recipe: Crispy Pan-fried Pesto Sauce Chicken Pizza 香脆香草醬雞薄餅

Some friends asked me what else pesto sauce can be used besides bread dipping and spaghatti? I would suggest pesto sauce chicken pizza if you have not tried this before.  Pizza definitely is one of my favorite dishes for family or friends gathering.  You can always prepare things in advance and make the pizza on the day with just a few easy steps.

Pizza dough requires a few hours to prepare as the fermentation process takes time!  Therefore, you can always make it in advance and store it in refrigerator or freezer.  Check out my recipe for fluffy pizza dough which is also same recipe for flatbread to go with curry dishes.   I always like to prepare a bottle of homemade pesto sauce  during weekend for my favorite bread dipping sauce. You can use different kind of cheeses such as mozzarella, cheddar, four cheese, even Parmesan to top on your pizza!

Ingredients: 

  • 1件比薩麵團 ( 食譜)

  • 馬蘇里拉芝士

  • 切達芝士(1/3 莫扎里拉芝士的分量)

  • 煮熟的香草雞肉

  • 自家製香草醬 ( 食譜)

Instruction:

  1. If you take the dough directly from the refrigerator, rest it for 10 mins before shaping

  2. Pre-heat oven at 250°C

  3. Place dough onto a lightly floured surface, sprinkle some flour on top

  4. Either using a rolling pin or your hands to stretch the dough until it becomes thin (see pictures)

  5. Don’t worry if the dough looks a bit uneven

  6. Place it on a parchment paper

  7. Brush a layer of pesto sauce onto the dough

  8. Grease a cooking pan and pre-heat it over medium high

  9. Slide the dough onto the pan

  10. add a layer of cheese then chicken. Finally add some more cheese on the top

  11. Wait until the dough start getting puffy and the bottom turn golden brown (about  2 – 3 mins)

  12. Put it in the pre-heated oven to bake for a few mins until the top is browned

  1.  如果麵團直接從雪櫃裡取, 先在室溫休息10分鐘, 然後造型。

  2. 預熱焗爐 250℃ (用烤烘模式)。

  3. 麵團表面灑上適量麵粉,讓它不會粘手。

  4. 可以用擀麵杖或雙手伸展麵團,直到它變得薄而平(見圖片)

  5. 如薄麵團看起來幾乎是透明或有點不平,請不要擔心。

  6. 將它放在烘焙紙上。

  7. 薄麵團上擦一層香草醬。

  8. 平底鍋上放一些油,用中高火預熱。

  9. 將薄麵團放到鍋裡煎。

  10. 加芝士,雞,面層多再加芝士。

  11. 直到餅面開始膨脹和底部變金黃色。(約2 - 3分鐘)

  12. 最後放入焗爐烤幾分鐘,直到表面金黃。

Tips:

  • If you don’t have time to make your own dough, you can buy a pre-made pizza crust/flatbread at supermarkets.

  • If you don’t have an oven, you can still finish your pizza on a frying pan.  Do NOT add pesto sauce onto the dough.  Just pan-fry both sides of the pizza dough until they are golden brown first. Then add pesto sauce, cheese and chicken.  Cover the pan with a lid and cook until cheese melts.

  • Make sure your frying pan can be used in an oven

  • 如果你沒有焗爐,你仍可以只使用一個煎鍋, 製作這個美味的pizza。首先, 麵團上不要擦香草醬, 將薄麵團放到鍋裡煎, 至表面膨脹和底部變金黃色, 翻轉煎另一面至金黃色,然後加香草醬芝士和雞, 蓋上蓋子。直至芝士融化。
